Tahini Chocolate Chunk Cookies
Makes 3 dozen
Preheat Oven to 350
Prep Time: 10 minutes
Bake Time: 10-12 min.
Ingredients:

1 1/2 cups Bobʼs Redmill Paleo Baking Flour

1 tsp. Baking Powder
-
1 tsp. Sea salt
-
1 tsp. Ground vanilla Bean
-
1/4 cup Raw coconut oil, melted and cooled
-
3/4 cup Tahini, room temp and well stirred
-
1 Cup Raw coconut sugar
-
2 eggs
-
4 ozs. ~ approx. 1/2 bag Huʼs chocolate chunks or chocolate chips of your choice

*1 cup chopped nuts and/or dried cherries (optional)
Directions:

In medium bowl, whisk together dry ingredients: flour, salt, baking powder and vanilla.

In small bowl, whisk together coconut oil, sugar and tahini.

Add eggs to tahini mixture and whisk until pale in color and thoroughly combined.

Combine egg mixture with dry ingredients and stir with large rubber spatula or

wooden spoon, until ingredients are incorporated.

Fold in chips and optional ingredients.

Scoop 1-2 tablespoons onto 2 parchment lined baking sheets (. Bake for 10-12 minutes or until just slightly undercooked

Allow to cool for 10 minutes after baking

Store in airtight container up to 1 week
