Paleo Nut and Honey Bars
Preheat oven to 350 degrees
9X9 square glass baking dish
Makes 36 squares
1 1⁄2 cups unsweetened coconut flakes, lightly toasted
1 1⁄2 cups sesame seeds, lightly toasted
1⁄2 cup whole almonds, chopped and lightly toasted
1⁄2 cup local honey
1/3 cup unsweetened sunflower seed butter
1 TBSP ghee
1⁄2 tsp. vanilla bean powder (Bright Earth Brand)
1⁄2 tsp. sea salt
In large bowl stir together bar ingredients. Press evenly into greased (with ghee)
dish. Bake for 25 min at 350 degrees. Meanwhile make the glaze. Cool bars for 30 minutes and top with glaze and refrigerate for at least 1 hour. Remove and cut into bars. Can be stored in cool dry place. No need to keep refrigerated.
1/3 cup EACH cacao paste and cacao butter (broken into pieces)
2 tsp. ghee
3 Tbsp local honey (you can substitute stevia)
Dash sea salt
4 drops Young Living vitality essential oil. (OPTIONAL).
Suggestions: bergamot, orange, peppermint
Directions for Glaze:
Combine cacao paste and butter, honey and ghee. Melt over low heat using
double boiler. Add salt and essential oil after melted and cooled for 10 minutes.
