Mandarin Spice

Cranberry Compote

Makes 2 cups

Cook Time-20 min


  • 3 cups fresh cranberries picked over

  • 3 fresh seasonal mandarins or 1 small orange, washed with skin left on ends/stem sliced off, and chopped into chunks (works best in food processor using on/off mode). Remove any seeds

  • 1 cup or just enough to cover ingredients

  • 2/3 cup pure maple syrup

  • 1 cinnamon stick

  • 2 tsp. ceylon cinnamon

  • 1/2 tsp. freshly grated nutmeg

  • 1/2 tsp. ground vanilla bean

  • 1/4 tsp. cardamom

  • 1/2 tsp. clove

  • Dash sea salt



In medium size saucepan-

  1. combine all ingredients and simmer over medium heat for 5 minutes.

  2. Lower heat and simmer for 15 or so minutes, until thick

  3. Remove from heat and cool

  4. Serve with turkey or as a spread on sandwiches, or as a jelly for toast or biscuits
