Low Carb Chocolate Chip Cookies

Makes 2 dozen cookies

350 degrees/8 minutes

 

Using mixer, such as a Kitchen Aid, Cream the following ingredients:

1/2 cup unsalted butter

1 cup almond butter

1/3 cup golden monk fruit 

1/3 cup coconut sugar

1/3 cup maple syrup

1 tsp. ground vanilla bean or 2 tsp. vanilla extract

 

Add: 

2 eggs, one at a time until fluffy

 

Turn Mixer on a slow speed and slowly add:

1 1/2 cups Bob’s Redmill Paleo Flour

1 tsp. sea salt

1 tsp. baking powder

1/2 tsp. baking soda

 

Using a wooden spoon, slowly stir in:

1 - 9 ounce package Hu’s Dark Chocolate Baking Gems

OR Lily’s Chocolate Chips

 

Drop onto parchment covered baking sheets and bake. Enjoy!
