Kinda Keto ~ Practically Paleo Chocolate Chip Cookies
Makes 2 dozen
Preheat Oven 350
Prep Time: 10 minutes
Bake Time: 8-12 min (Convection oven takes approx 9 min.)
In Kitchen Aid or other mixer:
1 1/2 cubes soft, pastured (grass fed) unsalted butter
2 eggs, room temp
2/3 cup golden monk fruit (I use Lakanto)
2/3 cup coconut sugar (I use Big Tree Farms, but any finely ground, good quality coconut sugar will do)
Mix in high speed blender adding eggs one at a time until fluffy
Slowly add dry ingredients:
1 1/2 cups ground oats (I use organic old fashioned) finely grounded
1 1/2 cups Paleo baking flour, by Bob’s Redmill
1 scoop collagelatin (I use Bulletproof) but any good quality collagen/gelatin will do.
1 tsp. sea salt
1 tsp. each baking soda and baking powder
1 tsp. ground vanilla bean (or 1 TBSP) vanilla extract. I use Wilderness Poets brand
When ingredients begin to resemble cookie dough stop mixer and stir in chocolate morsels, using a wooden spoon or large rubber spatula. Scoop onto cookie sheet lined with parchment. Bake until golden approx. 8-12 min, depending on oven.
1 package sugar free chocolate morsels (I use either Hu or Lily’s brand)
Remove immediately from baking sheet, cool and enjoy!
