Garlic Green Beans with Sun-Dried Tomatoes
Prep Time: 30 minutes
Cooking Time: 15 minutes
Makes 6-8 servings
Ingredients:
1 lb fresh green beans, de-stemmed
2 tsp ghee
1 tsp olive oil
1 large clove garlic, minced
2 Tbsp. sun dried tomatoes, finely chopped
1/2 tsp. sea salt and pepper (or more..to taste)
*2 Tbsp chopped, toasted nuts or seeds (optional)
pine nuts or pecans are my favorite
Directions:
In large sauce’ pan on med-high heat, melt ghee and sauce’ green beans, stirring frequently for 5 minutes. Add garlic and tomatoes, salt and pepper. Cook for an additional 3 minutes with lid on top. Remove from heat and allow to sit with lid on, for 5 more minutes. Stir in olive oil and sprinkle with nuts, if desired. Serve
