Caramelized Apple, Onion & Rosemary Pork Chops

Serves 2 to 3

Prep time – 10 minutes

Cooking time – 15 minutes

 

Ingredients:

  • 2 Tbsp ghee (clarified butter)

  • 2-3 Large, bone-in pork chops approx. 1 1/2 inches.

  • 1 tsp sea salt

  • 1/2 tsp Ground pepper

  • Dash cayenne

  • 2  Green/tart apples,  washed, cored, seeded and chopped, coarsely. Do you not peel. I used one Granny Smith and one Honeycrisp

  • 1 yellow onion sliced, then coarsely chopped

  • 3 small garlic cloves, peeled, stemmed and finally chopped

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon pure maple syrup.

  • Juice from 1/2 Meyer lemon

Instructions:

  1. Sprinkle both sides of pork chops with sea salt pepper and Cayenne.

  2. Heat cast iron skillet on medium-high heat.

  3. Add ghee to cast iron skillet and melt.

  4. Please pork chops on top of melted ghee.

  5. Allowed to cook, untouched, for approximately seven minutes. Keep an eye on them as you do not want them to burn but you definitely want them to brown.

  6. Turn pork chops over and cook for an additional 4 to 6 minutes… Depending on how thick your pork chop. 

  7.  Remove pork chops and place in a shallow dish covered with foil. Allowed to rest while you make the rest of the meal.

  8. Keep cast-iron on medium high heat.

  9. Combine apples, onions and garlic in cast-iron skillet.

  10. Stir apple mixture, scraping bottom of cast-iron to blend flavors.

  11. Add maple syrup and rosemary.

  12. Continue to sauté until onions and apples begin to caramelize, approximately 10 minutes.

  13. Sprinkle with additional salt and pepper if needed. 

  14. Serve caramelized apple onion mixture over pork chops.

  15. I like to serve this with baked sweet potato on the side. The apple onion mixture is also delicious on the sweet potato.
