Vegan Blueberry Banana Waffles

Bake Time: 25 minutes

Makes 6 waffles

 

Ingredients:

 

1 Ancient Grains Flour by Premium Gold

1 cup blanched almond flour

1/4 cup coconut flour

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. sea salt

1 tsp. ceylon cinnamon

1/2 tsp. ground vanilla

3 TBSP Bulletproof Brain Octane Oil, MCT or coconut oil.

1 very ripe medium banana

1 to 1 1/2 cups nut milk of choice

1/3 cup hot water

2 tsp. raw unfiltered apple cider vinegar

1 TBSP chia seeds

1-2 tsp. coconut oil. 

1 cup fresh blueberries.

Directions:

 

In high speed blender soak for 10 minutes :

1/3 cup hot water

2 tsp. raw unfiltered apple cider vinegar

1 TBSP chia seeds

 

Add remaining ingredients:

1 cup blanched almond flour

1/4 cup coconut flour

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. sea salt

1 tsp. ceylon cinnamon

1/2 tsp. ground vanilla

3 TBSP Bulletproof Brain Octane Oil, MCT or coconut oil.

1 very ripe medium banana

1 to 1 1/2 cups nut milk of choice

 

Blend until smooth  (approximately 10 seconds on medium)

Pour batter into medium bowl. Fold in 1 cup fresh blueberries.

 

Heat Waffle iron and coat with 1-2 tsp. coconut oil. 

 

Scoop 1/2 cup batter onto greased waffle iron. Batter will be thick. You can thin it a little with additional milk if desired. 

* Pumpkin Variation:

 

omit the banana, monk fruit, blueberries and vanilla

- add 1/2 oz can organic pumpkin puree or baked skinned sweet potatoes, 1tbsp molasses, 1/2 tsp ground nutmeg, 1/2 tsp cardamom, 1/2 tsp powdered ginger, dash ground clove, decrease nut milk.
