Bulletproof Meyer Lemon Blueberry Muffins

Makes 12 muffins

Preheat Oven to 375

unbleached muffin paper liners

 

 

1 1/2 cups Anthony's bleached almond flour 

1/2 cup Anthony's coconut flour 

2 scoops Bulletproof collagen protein powder

2 tsp. baking powder

1/2 tsp. salt

1/3 cup ghee OR raw unsalted butter, melted

2 TBSP Bulletproof Brain Octane Oil (you can use MCT or coconut oil instead)

4 eggs

1/2 cup granulated monk fruit (0 glycemic natural sweetener)

2 drops Young Living Lemon essential oil

1/2 tsp. each freshly ground nutmeg and cinnamon

Juice from 1 Meyer lemon.

1 1/2 tsp. lemon zest chopped finely

1 tsp. vanilla extract or vanilla powder/paste

1 basket (or 1 cup) fresh blueberries

 

In medium bowl:

 

Stir together dry ingredients

 

In small bowl:

Whisk together butter, oil, eggs and sugar (monk fruit) until pale and thick.

Add lemon juice, zest and oil, vanilla and spices. Whisk until combined.

 

Add liquids to dry ingredients and stir gently with wooden spoon. Stir in berries and scoop into muffin tins.

 

Bake for 25 minutes
