Banana Chocolate Chip Chia Muffins
Makes 18 muffins
Preheat oven to 350
Prep Time- 10 minutes
Bake time- 23 minutes
In large mixing bowl stir together:
-4 ripe bananas, smashed
-1 Tbsp apple cider vinegar
-1/4 cup Bulletproof Brain Octain oil (MCT)
-1 Tbsp chia seeds
-2/3 cup granulated monkfruit I prefer Lakanto brand.
Stir ingredients together and set aside while preparing remainder of recipe.
-1 scoop/2Tbsp Bulletproof collagen powder.
-1 tsp. Alum free baking soda
-1 tsp sea salt
-1 tsp dried vanilla bean powder
-1 tsp Ceylon cinnamon
-2 1/2 cups Anthony’s Culinary almond flour
2/3 cup Lily’s stevia sweetened mini chocolate chips (optional)
2/3 cup toasted pecan or walnut pieces (optional)
Stir dry ingredients together and add to liquid ingredients, until combined.
Scoop into muffin tins and bake at 350° for 22-25 minutes. Allow to cool for 15 minutes before serving.
