Flourless Sweet Potato Brownies

Preheat Oven to 425

Makes 24 brownies

9x9 glass baking pan

Prep Time 90 minutes (this includes baking the potatoes)

Bake Time 18-21 minutes

Ingredients:

 

In a small glass bowl:

  • 6 medjool dates, pitted and soaked in boiling water for 30 minutes. Drain and 

       puree dates in Cuisinart or other food processor.

       

Meanwhile: Bake potatoes..

  • 1-2 sweet potatoes- 1 cup pureed.

  • Roast at 425 for 30-45 min. or until insides are soft when poked with knife

       (cool enough to handle. Peel and combine with date puree

 

Reduce oven to 350 for brownies

  • 2 eggs

  • 1 cup almond butter

  • 1/2 cup cacao powder 

  • 1 scoop/2 Tablespoons collagelatin powder (this is a combination of collagen and gelatin) I use Bulletproof brand

  • 1 tsp. baking soda

  • 1 tsp. ground vanilla bean, or 2 tsp. extract

  • 1/2 tsp. sea salt (finely ground) 

  • 1/2 tsp. coarse sea salt (for sprinkling over brownie batter before baking)

  • 2 Tbsp. plus 1 tsp. ghee 

  • Grease baking dish with 1 tsp. ghee and set aside

  • Combine above ingredients and blend, using pulse-on/off, until all ingredients are smooth 

  • Pour batter into prepared baking dish

  • Sprinkle with remaining ingredients:

  • 1/2 cup chocolate Hu chocolate chips 

  • 1/2 cup broken walnut or pecan halves

  • 1/2 tsp. coarse sea salt, such as fleur de sal

  • Bake for 20-25 minutes 

  • Cool and cut into squares
