Blueberry Meyer Lemon Compote
hflc, keto, Bulletproof, paleo,
Makes 2 cups
4 Cups fresh blueberries, washed and picked over
1/2 water
1/2 cup maple syrup (dark amber or grade B)
1 scoop Bulletproof Collagelatin
2 tsp. fresh Meyer Lemon juice
1 tsp. lemon zest
dash sea salt
In heavy medium saucepan simmer all ingredients, stirring frequently until thickened to sauce consistency. Approximately 10 minutes. Remove from heat and set aside.
Serve with Ricotta pancakes or refrigerate and use as jam.
